Observation:
Walls in the dry storage and prep table area, outside the walk-in-cooler, are chipped and have peeling paint. The drywall is not sealed and not cleanable. This will attract pests. This has been mentioned to be repaired in the previous inspection.
Corrective Action(s):
Repair the walls so they are durable, level, smooth, sealed and cleanable. A correction order issued as this has been a reoccurring violation.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezes -16C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had rinse cycle temperature or 78.5C at the plate's surface as per max/min thermometers.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate or below RTE foods.
- No expired foods in use of for sale. FIFO rules followed.
- General sanitation level has been maintained. Ensure detailed cleaning and cleaning of hard to reach areas are being done on a regular basis.
- Exhaust canopy and filters are clean. Professional cleaning done in July 2023 and next service shall be done in February 2024, as per sticker.
- No signs of pests.
- FoodSafe certified staff present.

- Correction order issued. Highly recommend installing FRP (EXCELiner Wall Panelling) or Sequentia Wall Panels, and installing metal corner protectors.
