Observation:
Paint has worn away on the lower shelf of the prep table, where dry spices and seasonings are being stored. The surface is no longer sealed or cleanable. This makes the surface difficult to clean and accumulated food/grease will attract pests
Corrective Action(s):
Remove all items off the lower shelf and clean it. Repaint the lower shelf, in a light color, so the surface is smooth, level, durable, sealed and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -17C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher rinse cycle was 78.4C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in cloth bucket was 200ppm.
- All foods stored in food grade containers; covered; stored in groups with raw proteins separate or below RTE foods; and stored 6" off the floor on shelves.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is good. The exhaust canopy was professionally cleaned this month, and the next cleaning is due in July 2019 (as per service sticker).
- No signs of pests.
- FoodSafe certified staff present.
