- Refrigeration temperatures are ≤4o Celsius with exception of the beverage display cooler (~7 C)
*Monitor beverage cooler to confirm that it is maintaining a temperature of 4 degrees C or colder (adjust temp control if temperature remains above 4 C)
- Freezer temperatures are satisfactory
- Hot-holding temperatures are ≥60o Celsius
- Chlorine food-contact surface sanitizer solution available at ≥100ppm concentration
*Chlorine concentration in spray bottle exceeds maximum food-grade concentration of 200ppm. Operator advised to rinse all food contact surfaces after application of the sanitizer spray, or adjust concentration of sanitizer to food-grade level of 100-200ppm (ie. 1/2 teaspoon of bleach per Litre of water)
