Observation (CORRECTED DURING INSPECTION): Brush was stored inside the designated handwashing sink.
Corrective Action(s): Remove the brush. Do not store any items (ie. utensils, equipment, dishware) inside the handwashing sink. This sink is designated for handwashing purpose only.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Multiple buckets of soup was being cooled uncovered directly on the floor. This is an unsanitary practice. 2) Multiple food items (ie. cooked and raw chicken) stored uncovered inside the walk in cooler.
3) Rice scoop stored in warm water.
Corrective Action(s): 1) Cover the soup and stored the buckets of soup at least 6 inches off the floor to prevent contamination.
2) Cover all food items inside the walk in cooler with proper lids or plastic wraps.
3) Store rice scoop inside an ice bath and change regularly. Do not store rice scoop in warm water.
Date to be corrected: Immediately.

Observation: Cardboard was still being used on shelves of wire racks in the walk in cooler and dry storage area.
Corrective Action(s): Remove all cardboard on shelves of wire racks. Do not use cardboard as this is not food grade and contributes to poor sanitation.

Follow-up inspection from report# DSOG-AP8UJ3
- No cold potentially hazardous food items were stored at room temperature
- The staff was no longer using cloth to cover food items (ie. vegetables, lettuce).
- The staff stated that they mainly use the high temperature dishwasher to wash and sanitize dishware, utensils, and other food contact surfaces. They only sanitize large pots manually. Post the Fraser Health manual dishwashing procedures above the two compartment sink to ensure that the staff is following these procedures. The sign was provided to the operator.
- General sanitation of the kitchen remains the same and need improvements. Refer to inspection report #DSOG-AP8UJ3.
Note: Multiple repeat violations noted during the follow-up inspection. If chronic violations persist, stricter enforcement/violation tickets will be issued. Correct all the deficiencies by the correction dates.
