- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels - Coolers at < or = 4C - Freezers at < or = -18C - Hot holding units at > or = 60C - High temperature dishwasher in use. Final rinse temperature reached 78.2C at the plate level. - Food is covered and protected from contamination - Dry storage is satisfactory - No signs of pests observed during inspection *Purchase new chlorine test strips capable of measuring 50 ppm. Use test strips daily to test the glasswasher and maintain an accurate log. Keep the log available on-site for review.
