Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Dried on food debris noted on the blade of the meat slicer. **Note: This is a repeated violation**
2. Drain plugs not available for the 3-compartment sink for manual warewashing. As per operator, a new staff might have misplaced it during their last shift yesterday night.
Correction: 1. **Issue was corrected during the inspection** Operator dissembled the meat slicer to reclean and sanitize the meat slicer during the inspection. Note: This has been a repeated violation that was cited during past inspections, if noted again during future inspection, increase enforcement actions will be taken (may include orders, ticketing, closure, etc.).
2. Operator must find or buy replacement drain plugs immediately. At this time, all manual warewashing is to be paused until drain plugs are available.

Follow-up inspection to report# KLAI-CUHPQS
- Operator bought drain plug for the 3-compartment sink for performing manual warewashing - make sure we use the plug.
- The meat slicer was noted sanitary during the follow-up.
- Cleaning has also noted improved from the routine inspection.
- Proper storage hierarchy was observed in the walk-in cooler.

The following areas still require cleaning and sanitation:
- Some mouse droppings noted on the floor by the oven.
- One of the interior lids of the prep reach-in cooler still noted with dried food debris.

The above cleanliness will be assessed during the next routine inspection. No further follow-up at this time.
