Observation (CORRECTED DURING INSPECTION): Sprouts stored at ambient temperature in a mixture of ice and water. Ice and water mixture was not sufficient to immerse sprouts. Items were probed at 9C.
Corrective Action(s): Sprouts must be stored at 4C or less at all times to prevent potential pathogen growth. Sprouts must either be stored in a cooler unit at 4C or less or in a mixture of ice and water at 4C or less (completely immersed). Sprouts will now be stored in the cooler. Sprouts were stored at ambient temperature for less than 2 hours and moved into a cooler at 3C.

Observation (CORRECTED DURING INSPECTION): Raw meats (2 containers) were stored above ready-to-eat foods. This is a reoccurring deficiency.
Corrective Action(s): Raw meats must be stored below potential ready-to-eat foods to prevent potential contamination of foods. Cooler unit was reorganized at the time of inspection.

Comments

-Follow-up inspection to June 4, 2018.
-2-door prep cooler has been adjusted at was at 3C.
-Cardboard liners have been removed from cooler units.
-Pho broth made this morning properly cooled and ranged from 4C to 5C.
-Operator is no longer using the chest freezer as a work surface.
-Prep cooler door handles were found to be clean and sanitary at the time of inspection.
