Observation (CORRECTED DURING INSPECTION): 4 small buckets of meat sauce cooling at room temp on counter top with out lid.
Corrective Action(s): Ensure all hot food is rapidly cooled:
1. Ice bath
2. Small, shallow containers
3. Regularly mixed to allow hot air to escape
4. Ice/ cooling wand

Find ways to speed up cooling of hot foods as fast as possible. Sitting out at room temperature is not suitable practice on its own.

Observation (CORRECTED DURING INSPECTION): Wiping cloths (2) noted on counter and not stored in sanitizer solution.

Corrective Action(s): Ensure wiping cloths are returned to 100-200 ppm chlorine solution after each use to ensure that each use of the cloths has sanitizer solution available and applied to food contact surfaces.

Observation (CORRECTED DURING INSPECTION): Commercial Venthood past next service date of March 3, 2022. Inner venthood has build up of oil and grease.
Removable panels appear to be regularly cleaned by staff and are in good condition.
Corrective Action(s): Ensure commercial venthood is professionally service/cleaned as noted on "next service" sticker on venthood. Cleaning includes up the duct to the roof and the corresponding suppression system external piping and inner hood.

- High temp dishwasher noted at 71.2 C at the plate and 180 F at the gauge
- Food in walk in cooler and standing cooler is covered and protected
- Sanitizer bucket noted at 200 ppm chlorine with wiping cloths, some cloths left out on counter (***violation noted above)
-Plastic knife holder appears to be in good sanitary condition
-Prep sink drain shield extended with plastic extension - satisfactory addition
-Sinks appear to be maintained in sanitary condition with plugs visible and in use.
-Venthood removable covers appear sanitary - rest of venthood parts layered with oil - "Next Service: March 3, 2022"
***Ensure venthood is professionally serviced with in the next service period to prevent sanitation issues and fire hazard (***violation noted above)
