Observation:
The yearly health permit fees have not been paid. Premises does NOT hold a valid food premises permit and is operating illegally. Hand delivered the outstanding permit fees letter to staff.
Corrective Action(s):
Immediately pay the outstanding permit fees, in the amount of $150. Failure to pay the fees will result in closure of the premises until they have been paid.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION):
The back door was propped open and it didn't have a screen door on it. Pests (rodents and flies) can enter the premises.
Corrective Action(s):
The back door must remain closed at all times, unless a screen door or screen curtain is installed on the back door. At time of the inspection, the staff shut the door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The exhaust canopy vent has not been professionally cleaned in the last 12 months. The vent leading into the ceiling and to the roof will have accumulated dust, oil and other debris which could cause a fire hazard.
Corrective Action(s):
Hire a professional HVAC company to clean the exhaust canopy vent. Ensure this is cleaned on a regular basis.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
1) Aluminum foil was being used to cover a wall, and it was being changed once a month. Aluminum foil is not a durable, sealed, cleanable or reusable material.
2) Raw wood tables, platforms and pizza pan box found. Raw wood is not sealed or cleanable and will attract pests.
Corrective Action(s):
1) If aluminum foil is used to cover a wall, it must be changed at the end of every day, and new aluminum foil installed the following day.
**Correction date: Today**
2) All raw wood talbes, platforms and pizza pan box must be painted, so it is sealed and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -18C; and thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm. Bleach sanitizer in cloth bucket had [Cl2] of 200ppm, ensure the solution is made new, every 2 hours.
- General sanitation level is good. No signs of pests.
- Foods stored in food grade containers; labeled; covered; stored in groups; and stored 6" off the floor on racks, shelves, and platforms.
- FoodSafe certified staff present.
- COVID-19 measure in place, such as: hand sanitizer available to staff and customers; signs posted on door to wear mask and social distance; staff wear masks,
- Discussed results of the inspection with staff, no signature obtained due to the pandemic.
