Observation: Sanitizer dispenser only releases approximately 50 ppm quaternary ammonium compound (quats), despite repeated attempts.
Corrective Action(s): To be done immediately: Manually prepare sanitizer according to manufacturer's directions. Communicate to all staff that sanitizer dispenser is not be used until further notice, and that manual dilution along with testing should be done periodically.

To be done by August 31, 2018: Start an order to have the sanitizer dispenser adjusted or repaired so that it can reliably dispense 200 ppm quats.

Comments

Routine inspection conducted. Facility is generally in good sanitary condition. The following observations were made:

1. Temperatures (Max: 4C for coolers, -18C for freezers)
- Walk-in cooler compartment at 3C
- Prep coolers at 2C
- Condiment cooler at 2C
- Mini freezer behind counter at -18C
- Stand-up freezer at -18C
- Chest freezers and back room freezer at -18C
- Display warmer at 60-65C (Min: 60C)
- Temperature logs up-to-date until yesterday. Ensure that you continue taking temperature logs for today

2. Hygiene and Sanitizing
- Handwash station in food preparation area and restrooms adequately stocked with hot/cold running water, liquid soap, and single-use paper towels (for food prep area) or hand dryers (for restrooms)
- Sanitizer spray bottle contains approximately 200 ppm quaternary ammonium compound (quats)
- 3-compartment sink available and ready for use
- Utensils and tongs stored in sanitary condition
- Restrooms are well maintained

3. Storage
- All food items stored at least 6" off the floor
- Food items inside coolers and freezers are pre-packaged and labelled. Suppliers for all food products: Wallace and Carey
- Chemicals stored in compartment underneath handwashing station
- Food products in 7-Eleven store are organized, no expired products were observed at time of inspection

*NOTE: Pizza cutter was stored in water. Ensure that this is stored on ice to prevent growth of bacteria.*

4. Administrative
- Employee has FoodSafe 1 (renewed, valid until June 2022)
- Permit posted and up-to-date

5. Issues from Previous Inspections
- Area underneath 3-compartment sink is now in sanitary condition and does not contain any ants
- Holes underneath 3-compartment sink have been filled with a foam-based filler. If any ants continue to emerge, more extensive work may need to be done in sealing up entry points

6. Recommendations
- Some flies are starting to hover around the storage area for prepackaged cups and bags. Consult professional pest control company about measures of controlling flies, including fruit flies (e.g. UV-based fly traps, clearing out drains)
