- Walk-In Cooler (shared with Deli): <1 deg C
- Production Room Ambient Temperature: 8 deg C
- Open Display Cooler Cases: ≤4 deg C
- Temperature monitoring records appear maintained and up-to-date. Temperature checks are taken every 2 hours daily between 9 am and 9 pm.
- 200 ppm Quats sanitizer used for sanitizing food contact surfaces and food equipment.
- Reviewed frequency of cleaning and sanitizing procedures for equipment - cleaning and sanitizing takes place after every use, between species, and every 4 hours.

Note:

1. Some areas of meat department flooring requires replacing (epoxy is lifting/ peeling). Assistant Warehouse Manager is aware of issues. Flooring is under warranty and repairs are being scheduled.
