Corrective Action(s): Move these foods into the insert level or store inside the lower section of the prep cooler to maintain temperatures less than 4°C.

Comments

- Hand washing station is equipped with hot and cold running water, liquid soap, and paper towels
- Coolers are ≤ 4°C, freezers are ≤ -18°C
- High temperature dishwasher is available. Final rinse temperature reached ≥ 71°C.
- Two compartment sink is available for manual dishwashing. Reviewed manual dishwashing procedures for large equipment.
- 200 ppm bleach sanitizer is available
- Dry storage areas are maintained
- No signs of pests observed
- Premises is well lit

Note:
- Display cooler is turned off as it is not working. No perishable foods are being stored in this cooler. This cooler will be replaced soon.
- Reviewed thawing procedures. Ensure thawing is done in a cooler ≤ 4°C, under cold running water, or in a container of cold water that is changed at least every 30 minutes.
- Start maintaining temperature logs for all coolers at least twice daily.
- Keep pest control service reports on-site for review
