Routine Inspection
-Handwashing sink equipped with liquid soap, hot and cold water, and paper towel.
-Dishwasher registered a temperature of at least 71 C / 160 F on plate surface during final rinse. Rinse gauge on dishwasher should reach at least 82 C/ 180 F and hold for 10 seconds. Recommend obtaining a maximum temperature registering waterproof thermometer.
-Surface sanitizer (bleach at 200 ppm) available. Reminder: all bottles must be labelled.
-Coolers at 4 C or below.
-Freezers at -18 C or below.
-Hot holding of soup at 60 C or above.
-Meals are cooked, cooled, packaged, frozen and then sold on-site. Questions about packaged meals can be asked directly to staff on-site.
-Discussed minimum cooking temperatures. Recommend documenting cook temperature for all batches.
-When foods are reheated, ensure they are reheated quickly. Carving turkeys and hams for quicker cooling and reheating is recommended.
-General sanitation satisfactory.
-Door kept shut - recommend installing screen on door if you would like to keep door open.
