Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temperature dishwasher plate surface temperature measured at 68 degree C
Correction: 1. Use the dishwasher to wash and rinse the dishes, then use the 2 compartment sink beside the dishwasher to fill with 200ppm QUATs sanitizer. Fully immerse all dishes within the sanitizer for 2 mins to ensure proper sanitation has achieved.
2. Use the dishwasher upstairs that can provide proper sanitizing temperature.
3. Manager called the technician immediately, follow up inspection will be conducted on July 8, 2022.
Comments

Follow up inspection from previous critical violations:

- Chest cooler temperature measured at 4 degree C
- High temperature dishwasher plate surface measured at 71.9 degree C
- Walk-in cooler and freezer are cleaned
- No other concern noted at the time of inspection, the cooler and dishwasher now can resume their normal capacities

* Recommendation: run the dishwasher a few times before using it to ensure the temperature reaches the sanitation standard (plate surface 71 degree C)
