Kitchen and storage areas very clean. Minimal food on-site at time of inspection.
Kitchen fridge - less than 4 C.
Handwash stations all equipped with paper towels and liquid soap.
Note** Recommend reducing incoming water temperature to all sinks to reduce risk of burns/scolds to users. Water temperature measured at 60 C. Anything less than 50 C. would be safer.
Walk-in cooler not turned on at time of inspection. Rodent access points blocked off. **Operator to email temp. logs for day 1 operation.
Bleach spray bottles at 100 ppm. OK.
Operator to switch to bleach solution for ware washing in two compartment sinks. Signage provided. Make sure sanitizer sink is maintained at 100 to 200 ppm solution. Recommend daily test with strips to verify proper concentration.

Things looks good.
Continue to paint all exposed wood surfaces as prep/service expands into new areas. Close off walls to attic space to control any potential airborne contamination of food.
