- All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezer maintained below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Thermometers available for all cold-holding units.
- General food storage practices very good:
All food items covered and protected from contamination.
All food items stored at least 6 inches off the floor.
Meats stored on bottom shelf of walk-in cooler.
- QUAT sanitizer in all buckets = 200 ppm.
- QUAT sanitizer at dispenser at 3-compartment sink = 400 ppm.
- 3-compartment sink used for manual warewashing.
- High temperature dishwasher sanitizing with >71 degrees Celsius at dish level for final rinse cycle.
- Overall cleanliness and maintenance excellent.
- Door sweeps installed for back receiving doors.
- Ice machine clean. Ice scoop stored on designated hook.
- No signs of any pest activity at the time of inspection.
