Observation (CORRECTED DURING INSPECTION): 2 cartons of cream, 2 bag of beef roll observed to be stored in a stand up cooler measured at 12.8C air ambient temperature. 2 cartons of cream measured at 10.1C and 12C internal temperature. 2 beef roll bags observed to be measured at 11.3C internal temperature.
Corrective Action(s): Discard the aforrmentioned items.

Observation (CORRECTED DURING INSPECTION): Chlorine spray bottle measured at >200ppm. Operator informed that in-use utensils are cleaned and sanitized once a day.
Corrective Action(s): Prepare chlorine spray bottle to measure at 100-200ppm. Educated operator that in-use utensils must be cleaned and sanitized every 2 hours of continuous use or after each use which ever is lesser.

3-compartment sink sanitizing at 200 ppm chlorine solution.
Undercounter cooler and display cooler measured at 4C or lower. Stand-up freezers measured at -18C or lower.
Ice machine in sanitary condition.

Overall, facility is well organized.
