Test strips available. All coolers operating at less than or equal to 4C All freezers operating at less than or equal to -18C Hot-holding foods at >60C Tongs stored with handles outside of buffet foods Ready-to-eat foods for customers are wrapped in plastic All foods stored at least 6" off the ground and labelled.
