Observation (CORRECTED DURING INSPECTION): Knives observed being stored on side of cutting block. This is a cross contamination issue as the side cannot be properly cleaned. This is a repeat violation noted in previous inspection reports.
Corrective Action(s): Knives once used are to be immediatly brought to the warewashing area. Once cleaned and santized knives are to be stored in clean containers in the vincinity of the cutting blocks for easy access.
