Observation (CORRECTED DURING INSPECTION): Several items in the hot holding unit internal food product temperature ~ 45 to 50 degrees C.
Corrective Action(s): Ensure all food is reheated rapidly to over 74 degrees C for 15 seconds then transferred to a hot holding unit for holding at or above 60 degrees C.

Corrective Action(s): Ensure all raw potentially hazardous foods are store below ready to eat foods and vegetables/fruits. Adequately cover all food products to protect from contamination. Correct immediately.

Observation (CORRECTED DURING INSPECTION): 5 vaccum packs of beef observed thawing at room temperature. Internal food product temperature ranged from 14-17 degrees C. Operator stated they were thawing in this manner since previous night.
Corrective Action(s): Discarded. Ensure all frozen potentially hazardous foods are thawed in the cooler or under cold running water.

Observation: Bleach sanitizer available for use but in an unlabeled spray bottle.
