A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer -22C; thermometers present; and temperatures recorded daily. Temperatures are also electronically monitored, and a call is received when they exceed the set levels.
- Low temperature dishwasher had [Cl2] of 50ppm.
- Quats sanitizer used for manual warewashing at the 3-compartment sink was 200ppm.
- Hand sink in Production Room had liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good.
- No signs of pests. Weekly monitoring done by Steritech and Rentokil.
- All surfaces are in good working order. All light bulbs in Production room enclosed in plastic tubes.
- All foods stored in food grade containers; covered; date coded; and 6" off the floor on pallets, shelves or platforms;.
- All in order.
