Observation (CORRECTED DURING INSPECTION): Small prep cooler air temperature and food temperature is above 4 C (food temp 6.9C).
Corrective Action(s): Higher risk foods have been moved to another cooler and thermostat has been adjusted during inspection. Use this cooler for higher risk foods when it can keep them at 4 C or colder. All other coolers are at 4 C or colder.

Hot holding soup is at 60 C or hotter - good.
Coolers are at 4 C or colder except prep cooler (see above). Keep daily records of fridge and food temperatures.
Cooling of hot foods - is being done in a cold water bath - good.
Hand washing - sinks have liquid soap and paper towels.
Premises is well-organized.
Chlorine sanitizer is in labelled spray bottle. Use 100-200ppm. Today it is a bit strong. Make frequently.
Meat slicer is sanitized with chlorine solution and air dried (wash, rinse, sanitize, and air dry)..
Wiping cloths are clean and sanitized.
Commercial dishwasher has a final chlorine sanitizing rinse (50ppm detected after final rinse) - good.
Food Safe refresher course has been taken by operators and most staff.
