Observation (CORRECTED DURING INSPECTION): Large pot of Congee and large pot of broth stored on floor in walk in cooler unit. Internal temperatures taken and both items at approximately 15 degrees Celsius. Food items were from yesterday.

Observation (CORRECTED DURING INSPECTION): Shrimp found to be at internal temperatures of 12-15 degrees Celsius. Food items had been thawing in sink and were now found to be draining on counter. CORRECTED DURING INSPECTION - items discarded.
Delivery of raw meat items found to be stored in back area at temperatures of 0 to 5 degrees Celsius. Frozen items were thawing - CORRECTED DURING INSPECTION - Items moved to cooler unit.

Inspection conducted today with EHO Lisa Kirkham and Manager Inderjeet Gill. Owner present during inspection. Meeting with Manager Inderjeet Gill and EHO Lisa Kirkham at Health Protection Office on Friday November 8 2019 at 1:30pm. Please ensure all invoices for dry storage items are available for inspection.

COMMENTS
- Pest control program in place
- Handsinks adequately supplied - New handsink has replaced old mop sink that was used as a handsink; washroom handsink free from obstructions
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 (72.8) Degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine - spray bottles and buckets available - EXCELLENT! - Ensure they are used by all staff and changed daily
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Two functional sink plugs available for use observed
- Ice machine and scoops in good sanitary condition
- Pest proof containers for all dry storage items - Continue to store dry storage items in pest proof container to prevent against future pest infestations
