Observation (CORRECTED DURING INSPECTION):
1) Small cooler by the waitress station measured 10C at the time of inspection
2) Sliced lemons were being stored at room temperature.
Corrective Action(s):
1) Move all potentially hazardous foods to a working cooler. Repair or replace as necessary.
2) Store sliced lemons in a mixture of ice/water.

Observation (CORRECTED DURING INSPECTION): Scoops for rice were stored in room temperature water
Corrective Action(s): Store scoops in ice water and ensure that the solution is changed every four hours, when the melts, or when the water is visibly dirty. Staff made new ice water solution at the time of inspection

Observation (CORRECTED DURING INSPECTION): Sanitizer measured 0ppm in the spray bottles.
Corrective Action(s): Staff stated that it was made a week ago. Ensure that sanitizer solution is made daily. Use a solution of 5mL unscented household bleach in 2.5L of water. Staff remade solution at the time of inspection.

Observation:
1) Ginger and potatoes stored directly next to mop bucket.
2) Foods were left uncovered in the upright cooler, walk-in cooler and walk-in freezer
Corrective Action(s):
1) Ginger and potatoes were moved at the time of inspection. Do not store them next to the mop bucket
2) Cover all foods when in storage.

Observation: Debris observed on walk-in cooler fans, and on sides of equipment.
Corrective Action(s): Clean and sanitize area noted.

Observation: Knives stored in crack between equipment.
Corrective Action(s): Do not store knives in cracks between equipment as this area cannot be adequately cleaned and sanitized. Staff stated that they may purchased a magnetic strip.
