Observation (CORRECTED DURING INSPECTION): Food in the walk-in cooler was measured at an average of 12 - 12.5 C. Walk-in cooler had broken overnight and was being serviced at start of inspection. Cooler had not been maintaining refrigeration temperatures for an indeterminate amount of time (at least 8-10 hours). Staff had not checked internal temperature of food in cooler unit.
Corrective Action(s): All dairy, meat and other high-risk products in walk-in unit set aside for discarding and disposal (approximately 10 crate bags of milk, 12 insert trays of sandwich toppings, several boxes of cream cheese, several containers of yoghurt and assorted other perishable items), as well as items recently pulled from walk-in unit. Ensure these are discarded, and are not sold to the public. Cooler was operating at 4 C after servicing, and may be used to store perishable items after emptying.

Observation (CORRECTED DURING INSPECTION): Two cloth sanitizer buckets again contained less than 200ppm quat sanitizer (approximately 50ppm present).
Corrective Action(s): Replaced during inspection. This must be addressed by more frequent changing of sanitizer solution - future violations will result in progressive enforcement measures being taken.

Observation: Staff have not yet registered for Food Safe Level 1 (or an equivalent food safety course).
Corrective Action(s): Ensure several staff have taken this course by next month (6th January 2017). At least one staff member with this training must be on site at all times the restaurant is operational. Failure to comply will result in the issuance of correction orders and possible ticket penalties.
