Observation: Drain flies noted in dry storage and in bar at front. Fly control lights and fly strips noted in different locations. Operator is aware of the issue and the isuue is managed by a pest control company.
Corrective Action(s):
- Remove old fly strips and replace with new one. Discard old ones.
- Increase the frequency of cleaning and sanitizing hard surfaces. Clean surfaces particularly before closing time.
- Place fly control light where most activities are seen.
- Ensure no sugary beverages left on the bar area for long time. Increase cleaning and sanitizing for this area.

Routine inspection

- Hand washing stations maintained.
- Walk in cooler measured at or below 4 degree C. Food separation noted adequate. Food noted labeled properly.
- All coolers in kitchen and front measured at 4C or colder. Temperature log kept updated for all cooling units.
- Line coolers with inserts measured at or below 4C. Ensure to keep the lids over inserts closed while these units are not being used.
- Upright freezer measured at -18C or colder.
- 100 ppm chlorine detected in Low temp dish washer. Proper test strips available. Handling dirty/ clean dishes noted acceptable.

General sanitation is overall good.
- Floors noted clean. Counters and other hard surfaces maintained.
- 200-400 ppm QUAT sanitizer available in sani-buckets and spray bottles. Proper test strip available.
- Ice maker bin and ice apparatus noted clean. Ice scoop stored out of ice bin in a sanitary condition.
- Proper cleaning has been done over range exhaust hood and splashes in the kitchen.
- Recommended to add extra lights or change light bulbs to create brighter condition in the kitchen. This helps to conduct cleaning tasks easier.
- Customer washrooms noted clean and supplied.
- Dry storage organized and food stored at least 6" above the floor.
- Mop sink maintained. Mop Bucket noted empty and clean.

Staff are food safe certified. Valid certificates noted.
