Observation (CORRECTED DURING INSPECTION):
Bleach sanitizer in spray bottle was too strong and test strip bleached out.
Corrective Action(s):
Prepare a new sanitizer solution that is 100-200 ppm (1 tsp bleach per litre water).

Observation:
Back screen door is unsecured and has a big hole in the screen.
Corrective Action(s):
Place new mesh on screen door and ensure screen door is properly secured to prevent pest entry. To be corrected by July 25, 2017.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
General sanitation of premises needs improving. THIS IS AN ONGOING ISSUE IN EACH INSPECTION.
Corrective Action(s):
Thoroughly clean and sanitize the following areas:
- Underneath and behind all equipment
- Underneath and behind all sinks
- Hard to reach areas, including all corners and crevices
- Shelves and storage racks
- Inside coolers in kitchen
- Behind chest freezer in kitchen

All cleaning to be corrected by July 25, 2017.

Observation:
Multiple bottles of sanitizer were shown to indicate the bleach sanitizer however all were not clearly labeled or they were labeled with a different label.
Corrective Action(s):
Properly and clearly re-label all sanitizer bottles. To be corrected immediately.

Comments

Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Donair shaved and goes through a secondary cook step to a temperature of 74 degrees Celsius before being placed in hot holding above 60 degrees Celsius. At time of inspection, hot holding for donair was >78 degrees Celsius.
- 2-compartment sink used for dishwashing.
Ensure the manual dishwashing method is used for adequate dishwashing:
1. Wash
2. Rinse
3. Sanitize with 200 ppm bleach solution for 2 minutes
4. Air dry
- No evidence of pest activity at the time of inspection.

In addition to the violations above, the following also requires your attention:
- Ensure paper towels are placed in the dispensers rather than right beside them at the hand washing stations.
