Observation (CORRECTED DURING INSPECTION): Food handler indicated that bleach water sprayed on stand mixer after use without cleaning off debris.
Corrective action: Clean the food debris off the stand mixer with hot water before spraying the bleach water.
Rationale: Food debris needs to be removed from the surface of the equipment for the bleach sanitizer to inactivate the pathogens (ie. harmful bacteria) and prevent contamination to food, which can reduce the incidence of foodborne illness.

Observation (CORRECTED DURING INSPECTION): 1. Chutney sauce, chickpeas and various food items were observed to be uncovered in the walk-in cooler and sandwich prep cooler.
2. Bleach sanitizer for sanitizing the samosa maker and the stand mixer measured to have a concentration of chlorine that bleached out the test strip.
Corrective action:
1. Ensure that all food items are covered to protect food from contamination.
2. Re-make bleach sanitizer. Retest with test strip to ensure that the concentration of chlorine falls between 100 - 200ppm.
Rationale:
1. Physical contaminants can fall into the uncovered food, which can contribute to foodborne illness.
2. Wiping equipment surfaces with an excessive amount of chlorine can introduce chemical contamination to food, which can make customers sick.

Observation (CORRECTED DURING INSPECTION): Tape observed to be used on the under the counter cooler gaskets.
Corrective action: Remove the tape from the cooler gaskets.
Rationale: Tape is not an easily cleanable surface, which can support the survival of pathogens, ie. harmful bacteria and makes it difficult to clean.

Observation (CORRECTED DURING INSPECTION): Single use plastic bowls observed to be used as measuring cups for chickpeas and cornstarch.
Corrective action: Dispose of the single use plastic bowls. Use a foodgrade and washable measuring cup.
Rationale: Single use plastic bowls are intended to be single use and cannot be properly cleaned and sanitized in the dishwasher. Pathogens, ie. harmful bacteria, can survive on the surface and lead to food contamination, which can contribute to foodborne illness.

General observations noted the inspection.
1. Temperatures
-All coolers (walk-in cooler, sandwich prep, under the counter cooler, sweets display cooler) maintained at 4C.
-Under the counter freezer, chest freezers in the front and back maintained at -18C or lower.
-Fish thawing in cold running water observed.

2. Sanitation
-All handsinks equipped with hot/cold running water, liquid soap and paper towel.
-Low temperature dishwasher measured to be sanitizing at 50ppm chlorine.
-Bleach surface sanitizer measured to have 200ppm bleach.
-Vent hood maintained in sanitary condition.
-Food handler observed to be washing hands frequently.

3. Food storage
-Walk in cooler's light bulb observed to have shatterproof covering.
-Bulk foods items were stored in pest-proof containers.

4. Pest control
-No pest activity detected. Professional pest company services the premises weekly.

5. Administrative
-One staff onsite has valid and current FOODSAFE Level 1 training (expires May 29, 2023)
