Monitoring logs being maintained (For dishwasher final rinse) Clean container in place for clean knives Sanitizer container in place for wiping cloths. Ensure staff are aware to store wiping cloths in sanitizer container when not in use,. Sanitizer solution is to be changed every 2 hours
