Observation (CORRECTED DURING INSPECTION): Top overhead cooler for storage of pizza toppings observed to be at 20c. All food items in the inserts were discarded as they were there from yesterday ie 24hrs
Corrective Action(s): Ensure staff are accurately taking temperatures
Recommend using metal inserts as opposed to plastic as metal conducts cold far better as plastic is an insulator.

Observation (CORRECTED DURING INSPECTION): Quat sanitizer container observed at 0ppm quat. Wiping cloths observed stored on the counter when not used.
Corrective Action(s): Ensure staff know where the quat dispensering unit is located (Adjacent to the ice machine)
Ensure staff are aware to always store wiping cloths in the quat sanitizer immediately after use
Ensure staff are aware to change the solution frequently ie every 1.5 hours or more frequently depending on the organic load introduced

Observation: Mouse droppings observed below counter adjacent to the walk in cooler and on the floor below the pizza oven. Traps observed in place. Pest control contract remains in place

***Monitoring logs for the glasswasher were not being properly documented. Glaswasher is now using Iodine as a sanitizer. Documented logs observed writing in a final rinse concentration of "50" ppm which is not possible. Using iodine test strips and soaking the strip for 60 seconds as per the instructions on the label a final rinse concentration of approx 15ppm iodine was verified.
***Redo monitoring log so that it is clear Iodine is being tested. Ensure staff are trained on how to properly take a sample of the final rinse water for testing.
