Comments

-Two ovens were placed across from the dish pit. Ensure that a new floor plan is submitted for the proposed changes to the layout.
Both walk in coolers were < 4 C.
Other coolers/ freezer on site belong to the individual operators and are inspected during their inspections.
The dishwasher had 100 ppm chlorine.
Quats sanitizer solution was at 200 ppm
No evidence of pests observed during the inspection. Traps are in place.
General sanitation was satisfactory.
