- Hand washing sinks properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available in labelled spray bottles at 100 ppm (chlorine residual). *Ensure to store wiping cloths in bleach sanitizer solution in between uses.
- Low-temperature chemical dishwasher achieved 50 ppm chlorine residual at the dish surface, detected after final rinse cycle
- All coolers were measured to be at 4C or colder
- All freezer temperatures were satisfactory
- Accurate thermometers available
- Food storage practices satisfactory. All food stored properly covered and off the ground. Good separation between raw and ready-to-eat foods and vegetables.
- Dry storage area well maintained. Scoops for dry ingredients properly stored.
