Observation (CORRECTED DURING INSPECTION): 2 vertical broilers are not in proper operation according to food safety plan. Chicken and beef products measured 30C on vertical broiler for less than 2 hours as store opened at 12:00pm and foods checked at around 1:15pm. Foods undergo second cook step above 74C on grill.
Corrective Action(s): Ensure vertical broilers are turned on to adequately cook foods to proper critical limits as per food safety plan. Poultry 74C and beef and lamb 71C.
1) Turn on vertical broilers to ensure proper temperatures are maintained. Do not turn down broiler temperature to slow cooking process
2) Cut all meat on vertical broiler to cook on grill until adequate internal temperatures are met

Observation (CORRECTED DURING INSPECTION): 1) Rice scoops stored in standing liquid
2) No-name brand bleach used on site.
Corrective Action(s): 1) Re-clean and sanitize rice scoops.
2) Do not use no name brand bleach as it is not intended for household cleaning as per label. Purchase bleach intended for cleaning and sanitizing. Re-sanitize all utensils and equipment used for food when this has been purchased. Rinse food equipment with water prior to use to eliminate possible residue from no-name brand bleach. Operator's son arrived and will purchase proper bleach.

2) Fully equip handwash stations with clean paper towels.
