-General sanitation of sushi prep/service and storage areas was satisfactory
-Handsink supplied with hot/cold running water, liquid soap and paper towel. *Ensure gloves are changed frequently. If staff leave food prep/service area to go to storage area etc, gloves should be removed/discarded and hands washed prior to resuming food preparation.
-Refrigerated storage temperatures were adequate:
-Line cooler 2C
-Display cooler 4C
-Walk-in cooler 2C
-Frozen storage temperatures were adequate. Product maintained in a frozen state.
-True upright freezer -13C
-Walk-in freezer -18C
-Quats sanitizer solution 200ppm present. Wiping cloths stored in sanitizer solution.
-Dishwashing facilities shared with Prepared Foods area.
-pH of sushi rice was 4.2 (tested by staff at the time of the inspection)
-Records were up to date for temperatures, sanitizer and pH of sushi rice.
-Staff of duty have completed Foodsafe Level 1. Certificates present.
