*Lapses observed in monitoring logs. Ensure logs are recorded each day when in operation. All cold holding equipment cold holding at <4c Dishwasher at 122 F and approx. 60ppm chlorine. Soap dispensed into wash cycle. Hot holding at >60c Premises is being maintained.
