Observation (CORRECTED DURING INSPECTION): -Food stored in auto sham in sandwich station was <60C. Chicken breast (1 present) was 54.9C. Artichoke pesto (small quantity present) was 51.9C.
Corrective Action(s): -Food noted above which was <60C was discarded by staff on duty. Staff directed to adjust/increase temperature of unit and monitor food temperature regularly.

Observation: -Grease accumulation noted on exhaust canopy. Fans/filter appear to be clean; however, overall canopy is overdue for service.
Corrective Action(s): -Have exhaust canopy cleaned/serviced to remove grease accumulation. Correction date: April 10/18

304 - Premises not free of pests [s. 26(a)]
Observation: -Rodent droppings noted on the floor under shelving where clean dishes are stored in dishwashing area and behind CO2 cannisters in back storage area. This is an ongoing issue noted in previous routine inspection report.
Corrective Action(s): -Remove all items from the floor in areas noted above and clean up all droppings and disinfect the area. Keep floor area clear to facilitate cleaning and monitoring.
-Obtain pest proof bins to store dry goods including bread.
-Continue to monitor for further activity and clean up droppings immediately when noted.
-Traps present. Staff on duty reported Pest Control contract in place. Send copy of most recent service report to the undersigned.
