Comments

- Food storage practices in walk-in coolers appear satisfactory - food is protected from contamination.

- Wiping cloths stored in 100-200 ppm chlorine bleach sanitizing solution.

- Required cleaning has been completed in kitchen area. Catering storage area has been reorganized. Continue to work on regularly maintaining a high level of sanitation at all times.

- Leaking pipe under dishwasher spray sink has been repaired.

- Rotting wall behind handsink at kitchen handsink has been covered with stainless steel metal plating.

- Operator has scheduled to close premises for 1 week during summer 2018 to replace kitchen flooring. **Ensure that new flooring surface is light coloured, smooth, non-slip, non-absorbent, and easily cleanable.**

Note: Operator has moved upright single door freezer from catering storage area into kitchen area beside cooking line. No concerns at this time.
