Observation: Quats sanitizer dispenser located next to the handwashing sink at the end of the cook line was not working properly. Quats from this dispenser was testing at approximately 50 ppm, which is less than the requirement of 200 ppm. Note that there are two other sanitizer dispensers in the kitchen that are working properly.
Corrective Action(s): Correct within one week.

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher reached 73 C at the plate level.
The glasswasher had 12.5 ppm Iodine.
Quats sanitizer was at 200 ppm in the front of house and in the prep area. The cook line did not have an adequate level of sanitizer, see code 308 for details.
No evidence of pests. Pest control report reviewed during the inspection.
General sanitation was satisfactory.
