Observation: Heavy mouse droppings observed on both levels of store.
Downstairs:
- under pizza oven
- along walls in sink area
- heavy droppings throughout hot water tank room (under stairs)
Upstairs:
- Behind walk in cooler (note this area can be reached my mop or broom by moving one shelf)
- In storage area along all walls, especially in corner by partial wall
Corrective Action(s): 1) Clean the above areas of droppings. Use diluted bleach solution - 9 parts water to 1 part bleach. Wipe up wet
2) ALL food products must be secured in pest proof containers with tight fitting lids. This means fried snacks made on site, sweets, bags of flour, bulk dry goods, etc.

Observation: Poor sanitation noted in most hard to reach places in store. Upstairs worse than down
Corrective Action(s): ALL hard to reach places must be thoroughly cleaned nightly. You have an active, worsening rodent infestation that is thriving in an unsanitary environment. If there isn't food for them to feed on, the infestation will not progress further.

Comments

A massive clean is required throughout the premise. This is not to be a one time occurrence!
As noted above, your entire premise must be pest-proofed with rigid, tight lid containers for all food product.
Cleaning must be daily, with equipment moved to access hard to reach corners
As discussed with owner on site, shelving units must also be moved away from walls to check for holes and clean out droppings and debris
Tiling to occur in hot water tank room to seal up walls.
Please investigate the vacant space under the stairs and along the wall bordering the South side of your kitchen

All cooler temperatures satisfactory with exception of the small prep cooler upstairs (not in use at time of inspection)
Freezers ranged from -33C to -17C
Bleach sanitizer on site in rag buckets and in 3 compartment sink upstairs.
Hand sinks supplied with liquid soap, paper towels, hot/cold running water

***Have all of your pest reports sent to me for review. Until the rodent problem is solved, have pest control on site weekly. Have staff document where they are finding droppings during their end of shift clean up***
