Observation: - Mouse droppings noted on floor under shelving unit on west wall.
Corrective Action(s): - Clear all items from under shelving. (Boxes present, additional shelving racks etc.)
- Remove all droppings and disinfect area
- Keep floor area clear so that runways/hiding places are not created and to facilitate monitoring
- Continue to monitor and clean up droppings/disinfect area immediately
- Ensure all entry points (holes/gaps) are filled.
- Ensure pest proof bins for dry goods are tightly sealed.
- Pest control contract in place with monthly service. Maintain contract with pest control company, following all recommendations and increase service frequency if activity does not decrease.

Comments

- General sanitation of premises and equipment satisfactory
- Handsink supplied with hot and cold running water, liquid soap and paper towel
- Quats sanitizer solution present from dispenser at 3 compartment sink used for manual warewashing sanitizing step and for sanitizing food contact/prep surfaces. Concentration from dispenser and in spray bottle measured 200ppm.
- Coolers operating at acceptable temperatures (4C or colder) and freezers maintaining product in a frozen state:
- Walk-in cooler 2C
- Fridge/freezer 2C/-11C
- Upright freezers -18 to -21C
- Chest freezer -21C
- Food stored in a manner to prevent contamination ie. on shelving, covered, in packages in bins.
*Previous tenant who was producing sweet potato dog treats in the walk-in freezer (out of commission) is no longer using the space. Space is now being used for photography. Area is separated by a door and does not appear to have an impact on the existing food business.
*Prep tables noted in previous routine inspection report and not for the existing business have been removed from the premises.
