205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food inside the walk-in-cooler was above 4 degrees C (noted between 6.5 to 9 degrees C). Walk-in-cooler was initially around 12 degrees C and staff mentioned that it had broken less than 2 hours ago.
Corrective Action(s): Staff placed clean food grade bags with ice inside over the cold potentially hazardous food to lower its' temperature. The walk-in-cooler was being repaired prior to the inspection and was repaired during the inspection to be at or below 4 degrees C.

As per your food safety plan, ensure all cold potentially hazardous food above 4 degrees C for less than 2 hours is transferred into another cooler that is maintained at or below 4 degrees C until the broken cooler is adjusted/repaired to 4 degrees C or less.

Observation (CORRECTED DURING INSPECTION): Walk-in-cooler was initially approximately 12 degrees C. Staff mentioned that it broke about half an hour ago. A technician was re-servicing the walk-in-cooler during the inspection and was voluntarily called by the Operator prior to the inspection.
Corrective Action(s): Walk-in-cooler was re-serviced to 4 degrees C or less (2.3 degrees C in the back and 3.6 degrees C near the door). Ensure the walk-in-cooler is maintained at or below 4 degrees C and monitor its' ambient temperature at least every 4 hours.

Observation: Two light covers are missing in the ceiling of the main food prep. area in the kitchen.
Corrective Action(s): Replace the missing light covers within 2 months. This will be checked during the next inspection in March 2018.

Comments

Handsinks were adequately supplied with liquid soap, hot and cold running water, and paper towels.
Prep. cooler and bubble tea cooler were at or below 4 degrees C.
Upright freezer and two chest freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
100 ppm chlorine sanitizer was available in the spray bottle in the bubble tea area, bucket in the bubble tea area, and bucket in the kitchen.
Dishwasher final rinse chlorine residual was at least 50 ppm at the plate (actually measured between 50 to 100 ppm).
Both ice machines were in a clean condition.
No signs of recent pest activity were observed at the time of inspection.
FOODSAFE trained staff member was present on-site who recently completed their FOODSAFE training on Decemeber 20, 2017.
