Temperature Controls:
All fridges must maintain foods at or below 4 deg C:
-1-door display 3 deg C (pop)
-mini-fridge in the back 4 deg C (paan leaves)

Note: any tin cans once opened must be fully emptied -once opened the inner surface will rust and contaminate foods

Chemical Controls:
Reviewed Manual Dishwash Method with operator: wash-rinse-sanitize with bleach >100ppm as per test strips (Manual Dishwash sign available for review)

Bleach sanitizer spray bottle must be maintained >100ppm as per test strips:
-checked and verified -used with paper towels only

General Sanitation
-no signs of pests

Professional pest control comes on a regular basis

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
