Observation (CORRECTED DURING INSPECTION):
- Bleach sanitizer in spray bottle labeled "for cutting board use" concentration well over 200ppm.
- Bar glass washer 0ppm chlorine during the rinse cycle.
Corrective Action(s):
- Ensure bleach is diluted to 100-200ppm for use as a food contact surface sanitizer. General sanitizer formula is 1 oz of regular unscented bleach to 1 gallon of water.
- In the interim all glasses and mugs used for tasting of beer must be washed in the kitchen high temperature dishwasher.

- Store all scoops and other dispensing utensils outside of food product.
- Do not use cloth to cover food products.
- Provide a light cover for the light fixture inside the walk in cooler.

Corrective Action(s): Temperature monitoring records not maintained. Service the back 2 door freezer and ensure it is capable of maintaining -18 degrees C or less at all times. Correct by January 30, 2019.

Corrective Action(s): Service the bar glass washer and ensure it is capable of sanitizing glassware with 50ppm chlorine during the rinse cycle. Obtain test strips to verfiy the chlorine concentration on a daily basis. In the interim all glassware and mugs must be washed in the kitchen high temperature dishwasher. Correct immediately.

Walk in cooler at 3 degrees C.
Hot holding at or above 60 degrees C.

Temperature logsheets on clipboard at back area again left blank. No entries for cooler, freezers, hot holding, and dishwasher final rinse temperature. Ensure temperature monitoring occurs on a daily basis.
Note: new menu items of tapas. Provide an updated food safety plan to reflect the new menu items.
