- Handsinks are stocked. Ensure that handsinks are readily accessible at all time. Do not block the way.
- 200ppm QUAT sanitizer available in spray bottles
- High temp dishwasher reached >71C at plate's surface
- Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezer)
- Observed staff not changing disposable gloves as needed. Ensure that new pair of gloves are worn before handling foods.
- Temperature monitoring log is not consistent. This is critical step food safety plan. Ensure to monitor and record temperatures of refrigeration units on daily basis.
- Water in container storing rice scoop shall be changed every 30 minutes.
- Observed 2 large pots of sauces being cooled in water bath that felt warm to touch. Ensure to cool in cold water; water shall be changed as needed.
- Ensure to store foods at least 15cm off of floor.
