Observation (CORRECTED DURING INSPECTION): Food items inside Fridge #4 had internal temperatures ranging between 8-18C. The cooler had been malfunctioning.
Corrective Action(s): Potentially hazardous foods inside fridge #4 were discarded at the time of inspection. The items included: a large bucket of bean soup, sour cream, cream based sauces, raosted vegetables, cabbage rolls, pork crepes, cooked buckwheat, fried onions, lime bacon, borsch. Do not store potentially hazardous food inside this cooler until it can maintain 4C.

Observation (CORRECTED DURING INSPECTION): Hot water had been turned off at the hand washing sink by the dishwashing area. Staff could not recall when they last had hot water in that sink. This is the only functioning hand sink in the kitchen.
Corrective Action(s): Staff turned the hot water on during the inspection. Ensure hot water stays on at all times for all hand washing sinks to maintain sanitation. No access to hot water can lead to facility closure.

Observation: Fridge #4 had an ambient temperature of 14C, recorded using a probe thermometer for 15 minutes.
Corrective Action(s): Stop the use of this cooler immediately. Repair or replace the cooler to ensure it can maintain 4C for safe storage of cold potentially hazardous foods. Date to be corrected by: Sept 1, 2023. Inspector will return to follow up.

Observation: None of the kitchen staff had valid Food Safe level 1 training.

Temperatures:
Coolers #1, #3, along the cook line were maintaining 4C or below.
Prep coolers (4) were maintaining 4C or below.
Stand up freezers were functional and maintaining -18C
Glass door cooler was maintaining 4C
Hot holding units were holding food at 60C or more
Display cooler was holding baked goods at 4C surface temperature
All units have thermometers.
Temperature logs are being kept - *see violation above*
NOTE: Ensure adequate action is taken when coolers are unable to maintain 4C. Fridge #4 was documented to have temperatures between 5C-8C in the last two days but no action was taken. Refer to your approved Food Safety Plan for adequate course of action.

Sanitation:
High temperature dishwasher is maintaining 79C at the dish surface after the final rinse cycle
200 ppm QUATS is available in labelled spray bottles. Dispenser is functional.
Dishwashing sinks are functional with plugs.
Hand washing sink at the front was adequately equipped with hot and cold running water, liquid soap, and disposable paper towels. *see violation above for the other sink

No pest activity noted at the time of inspection.
Facility is not monitored by a professional pest control company. Staff indicated that they have not seen any issues with rodents recently but in the past they had concerns. Openings along the plumbing and areas under the sinks have been adequately closed off to prevent access.
