-Hot soup holding: 60 C -64 C
-Chicken hot hold display unit warming up as chickens cook in oven
-Discussed manual dishwashing at 3 comp sink - no concerns
-Sanitizer dispenser noted 200 ppm QUATS -sanitizer jug nearly empty and will be replaced by staff
-Sanitizer bucket with cloths noted 200 ppm QUATS.
-Meat slicer in use during inspection - appears to be maintained in sanitary condition
-Non-latex gloves available to staff.
-No signs of pest activity during inspection
-General sanitation satisfactory
