Follow up inspection:
-Rodent droppings in previously noted areas were removed. Floor was sanitized with bleach water (1 part bleach with 9 parts water) according to the Manager.
-Vent and area surrounding the vent near the proofer was cleaned.
-Bakery display cooler and reach in cooler were at or below 4 degrees C.
-Manager stated that they have reviewed proper temperature monitoring procedures with staff. They stated the procedure is for staff to report temperature control issues to Management.
-Ensure staff continue with regular monitoring (2 hour checks during operation) and documentation as per the food safety plan.
