Monitoring logs being maintained Dishwasher at 121F and approx. 100ppm chlorine in final rinse. Soap dispensed into wash cycle. Food items covered and dated inside walk in cooler. Walk in cooler at <4c Walk in freezer at <-18c All front prep coolers cold holding at <4c Sanitizer containers on site. Wiping cloths submerged. Sanitizer at correct concentration. Cleaning and maintenance of the equipment and food preparation areas has substantially improved.
