Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Meat slicer observed to have grime and food debris underneath the top blade guard.
2. Ice machine observed to have middew and pink mould in the crack and crevices.
3. Knife rack observed to have crumbes/dust/food debris.
Correction: Please clean and sanitize all noted areas. To be corrected by: Aug 24, 2023

- Both stand up cooler in the dinning room and the cooler drawers measure 4C and below
- Ice Machine have been cleaned and sanitized
- Knife Display rack have been cleaned and sanitized
- Meat slicer have been cleaned and sanitized

Note:
- Back handwashing station still running really hot. Operator has notified head office to have plumber look at sink.
- Please continue to use bleach until QUAT sanitizer dispenser has been serviced to dispense at 200ppm. Please acquire test strips to test concentration.
- Please check cooler/freezer temperatures twice a day and document on a tracking sheet.
