Observation: Lack of sanitizer solution in front dispensing and pizza/sauce/baking area. Bottle was located on floor adjacent to dead mouse.
CORRECTED DURING INSPECTION - Bottle refilled and exterior sanitized.

Drawer filled with rolling hot dog nameplates filled with dirty rolling nameplates. All greasy and have food debris on exterior.

Corrective Action(s): Ensure adequate supply of sanitizer solution at front counter area.

Observation (CORRECTED DURING INSPECTION): Soap pump malfunctioning at main handsink for pizza/sauce/baking area. CORRECTED DURING INSPECTION - new soap pump obtained.

Observation: Severe rodent infestation:
- one dead rodent found on floor in pizza/baking/sauce area
- rodent droppings found on shelves amongst bagged chips and snacks

- Ants found circling dead mouse and dead centipede.

Observation: Floor under cash and pizza/sauce/baking area has food debris.
Floor under coffee station has food debris.
Inside cupboards of coffee station and slurpee station has spilled liquid and sugar
Spills observed on shelves and walls of pizza/sauce/baking area.

Corrective Action(s): More cleaning and routine cleaning is necessary. The rodent and ant infestation is directly linked to the general sanitation of the facility - the sanitation is poor therefore the infestations are occurring.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Floor is filthy under equipment in cash area and pizza/sauce/baking area. Has not been cleaned for some time as evident by dead mouse and food debris.
Floor is dirty under coffee station. Spilled creamers, sugar, etc.
Walls and inside cupboards are dirty with spills of liquids and sugar.
Rodent droppings found on all 4 shelves of chip/snack aisles.

Corrective Action(s): All surfaces of facility require vigorous cleaning. Remove all items from cupboards and shelves, completely sanitize and restock only those items that are not contaminated by rodents (none found during inspection)
Use 200ppm chlorine or equivalent to sanitize areas.
Improvements to frequency and detail of cleaning is required.
Floor under pizza/sauce/baking area was NOT cleaned on previous night. Shelves in this area have not been cleaned for some time.

All food preparation areas are to be thoroughly cleaned and sanitized and MAINTAINED IN SANITARY CONDITION as this is a food preparation establishment. If the facility is to continue preparing food then the facility and staff need to better demonstrate the ability to maintain a sanitary food preparation area.

- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Two functional sink plugs available for use observed
- Raw meat stored away from Ready to Eat food items
- First In First out and date stamping methods observed in use
- Hair restraints in use
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Staff Personal items kept separate from kitchen equipment
- Tongs and pizza cutters cleaned at 14:00

NOTE: "F'real" frozen treat sanitation and cleaning methods discussed during previous inspection - no changes to cleaning schedule or operation

Health Inspector to return on Thursday. The general sanitation of the facility must improve. The current state of the facility is unacceptable. A thorough cleaning of the ENTIRE facility must occur. This includes the cash area as this is directly next to the food production area and is impacting the infestation of the facility.

If the facility does not improve the overall sanitation then FINES or potential CLOSURE ORDERS could be issued.
